Dr. Burri is a Research Chemist in the Western Human Nutrition Research Center, Davis, California. Her research focuses on the metabolism, functions and health maintenance properties of carotenoids and vitamin A. Carotenoids are a family of over 600 plant pigments that are strongly associated with cancer and heart disease prevention through epidemiological studies, but whose health benefits in humans have been difficult to establish experimentally. Dr. Burri's objectives include: (1) characterize the mechanisms controlling the absorption, bioaccessibility and metabolism of carotenoids such as beta-cryptoxanthin, and vitamin A; (2) determine the extent of normal individual variability in bioaccessibility, absorption and metabolism and the reasons for this variation; (3) identify the most significant biochemical factors that influence the metabolism of these carotenoids; and (4) investigate the mechanisms of carotenoids that are responsible for their health maintenance properties.
